The BEST Strawberry Filling
Strawberry filling can elevate any dessert easily. It is super easy to make and doesn’t take any time at all. It makes people feel like you tried that much harder. You can make this recipe chunkier or smoother just depending on how you cut your strawberries. Ugh I am just imagining this on top of a funnel cake with powdered sugar, classic! I got off track but anywaaaays here is the recipe to follow!
So in this case I was making the filling for a cake. I wanted it to have small chunks but not whole strawberries to bite into. It also helped to hold the cake with a smoother filling. To start, I cut an entire container of strawberries and cut each one into fourths. With the temperature on medium let the strawberries heat up and reduce. This helps the strawberry loosen up and become more of a sauce.
Next, add in the granulate sugar and cornstarch. The granulated sugar will help the strawberries break down even further (and obviously sweeten it too). The cornstarch is meant to thicken the filling.
Once the sauce is the consistency you like, take of the heat and let cool. To speed up cooling place in a bowl and into the freezer. You don’t want to decorate with super hot filling because it will make the frosting melt and the cake soggy. I used the Whipped Cream Frosting Recipe with this cake and it was the perfect combination of flavors. Light and fluffy while the filling was sweet and tart. This recipe is really simple but so delicious. I seriously recommend this to everyone. The cake I made was a winner for sure, everyone loved it.
