BLUEBERRY LEMON LOAF CAKE

This recipe is a good way to amp up your breakfast treats! Homemade will always taste better than store-bought and this recipe really shows it.  


Here are all the ingredients that will be necessary, recipe below.


You are going to want to start by mixing your butter, sugar, eggs, vanilla, lemon zest and lemon juice.


Next, mix the flour, baking powder and salt in a separate bowl. Then, adding in half of the flour mixture into the wet mixture above and mixing. Then add half of milk and mix. Then the rest of the flour mixture and mix. And last add in the last of the milk and mix.


Grab washed blueberries and add in that tablespoon of flour. The flour will help the blueberries from sinking to the bottom of the pan. Mix the blueberries into the batter.


I used non-stick spray and it worked well but parchment paper would make it much easier to take it out. (see hoe the berries are at the top!!)


The first loaf out of the oven! Between loafs I made the glaze. It was super simple and really just mixing the ingredients together. Be sure to use ACTUAL butter not the country crock kind. That kind is mostly vegetable spread.


Once out of the oven let cool and then pour the glaze over.

Blueberry Lemon Loaf Cake

INGREDIENTS

Blueberry Lemon Loaf Cake

  • 1 and 1/2 cups All-Purpose Flour

  • 1 tsp Baking Powder

  • 1 tsp Salt

  • 1/3 cup Butter,melted

  • 1 cup Sugar

  • 2 Eggs

  • 1/2 tsp Vanilla Extract

  • 2 tsp Lemon Zest *one lemon will be able to make the cake and the glaze

  • 2 tsp Lemon Juice

  • 1/2 cup Milk

  • 1 cup Fresh or Frozen Blueberries

  • 1 tbs All-Purpose Flour

Lemon Glaze

  • 2 tbs Butter

  • 2 tbs Lemon Juice

  • 1/2 tsp Vanilla Extract

  • 1 and 1/2 cups Powdered Sugar

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and line your pan with parchment paper for easy removal (or spray with non-stick)

  2. Next, whisk flour, baking powder and salt and set to the side.

  3. In another bowl, using an electric mixer, mix melted butter, sugar, eggs, vanilla, lemon zest and lemon juice.

  4. Then add in half of the four mixture and mix.

  5. Then add in half of the milk and mix.

  6. Then add in the next half of the flour mixture.

  7. Mix in the last half of the milk.

  8. Rinse blueberries and the 1 tbs of flour. This prevents the berries from sinking to the bottom of the pan.

  9. Add the berries into the batter and mix by hand until combined.

  10. Pour the batter into the pans of your choice and bake for 30-40 minutes or until a toothpick comes out clean and is golden brown.

  11. Combine ingredients for the glaze by whisking and pour over the cooled loafs.
