CASHEW CHICKEN LETTUCE WRAPS

Craving something relatively “healthy” with an Asian twist. For dinner, we decided to go with chicken lettuce wraps. Instead of plain old regular wraps, we wanted to spice it up. You literally just throw together all the ingredients and voila! 

Cashew Chicken Lettuce Wraps

2 Chicken Breasts Any Garlic Rub Romaine Lettuce 3 tbs Vegetable oil 1/4 tsp Minced Garlic 1 tsp Soy Sauce 1/4 cup Chopped Cashews

Cashew Chicken Sauce: 2 tbs Soy Sauce 1 tbs Rice Vinegar 1 tbs Brown Sugar 1/4 tsp Red Cayenne Peper 1/4 tsp Ground Ginger

First, rub your chicken with garlic rub and grill until golden brown. Chop it into smaller pieces or shred. 

In a medium saucepan, add the vegetable oil, garlic, 1 tsp of soy sauce and brown the chicken.

In a small bowl, mix 2 tsp of soy sauce, rice vinegar, brown sugar, red cayenne pepper and ground ginger.

Add the sauce and chopped cashews to the saucepan and let simmer.

Grab your lettuce wraps and add the chicken and enjoy! Add toppings as you like.

Cashew Chicken Lettuce Wraps

INGREDIENTS

  • 2 Chicken Breasts

  • Any Garlic Rub

  • Romaine Lettuce

  • 3 tbs Vegetable oil

  • 1/4 tsp Minced Garlic

  • 1 tsp Soy Sauce

  • 1/4 cup Chopped Cashews

  • 2 tbs Soy Sauce

  • 1 tbs Rice Vinegar

  • 1 tbs Brown Sugar

  • 1/4 tsp Ground Ginger

INSTRUCTIONS

  1. Rub chicken with garlic rub and grill until cooked through.

  2. Shred chicken and warm in a medium saucepan. Add vegetable oil, garlic, 1 tsp of soy sauce and brown the chicken.

  3. In a small bowl, mix 2 tsp of soy sauce, rice vinegar, brown sugar, red cayenne pepper and ground ginger.

  4. Add the sauce and chopped cashews to the saucepan and let simmer.

  5. Put chicken in lettuce wraps and enjoy!
