CRISPY SWEET POTATO TOTS

Okay, so carbs are life. I think we can all agree on that. When I discovered sweet potatoes I was obsessed. It’s a “healthier” option and super versatile. I got a little tired of just cubed up sweet potatoes. My mom bought this bag to steam and it is super easy and I recommend this for nights you really don’t want the hassle. So for some crispy “healthier” tots keep on reading!

You need sweet potatoes, breadcrumbs, mozzarella cheese, egg and salt, and pepper. 

First, you want to microwave/ steam the potatoes according to the bag instructions. If you wanted you could also boil the potatoes. You just need them to be soft enough for mashing. Next, add all the ingredients in and mix until well combined. 

Line a baking sheet with foil and a little bit olive oil. Roll the mixture into tot sizes and bake at 425 degrees F for 15-20 minutes. 

When you take them out they should be golden brown and crispy. 

They have a nice little kick from the garlic but still, have the sweetness from the potato. Absolutely amazing and really easy to make. You can even make these ahead of time and freeze them.

Sweet Potato Tots

Servings 5 people

INGREDIENTS

  • 1 16 oz. Bag of Sweet Potatoes or about 3 Sweet Potatoes

  • 1/4 tsp. Garlic Powder

  • 1/4 cup Shredded Mozzarella Cheese

  • 1 cup Plain Breadcrumbs

  • 1 Egg

  • salt and pepper to taste

  • Non-Stick Spray or Olive Oil


INSTRUCTIONS

  1. Preheat oven to 425 degrees F.

  2. Microwave the sweet potatoes according to the bag.

  3. Mash the sweet potatoes.

  4. Add in garlic, salt and pepper, cheese, breadcrumbs and egg.

  5. Line a baking sheet with aluminum foil and spray with nonstick or olive oil.

  6. Make the mixture into tot sizes with your hands.

  7. Place on sheet and bake for 15-20 minutes or until golden brown.
