Today I have another easy recipe that everyone could try out! It is a baked coconut crusted chicken recipe. If you don’t love sweeter chicken I would still try this recipe because a hint of paprika really balances out the sweetness. It may seem really hard but it only takes a few minutes and voila pop them into the oven and done.  If you’re interested, keep on reading and learn what it takes💪.

So, you need flour, paprika, salt, pepper, chicken breasts, eggs, coconut flakes and plain breadcrumbs. 

Before you get started, you want to line a baking sheet with aluminum foil. Then, evenly spread a think layer of olive oil. 

Next, cut the fat off of your chicken and slice it into tender-sized strips. 

Grab a bowl and whisk together 3 eggs. In another bowl mix the flour, salt, pepper, and paprika. In one last bowl mix together the breadcrumbs and coconut flakes. 

To make sure you create the smallest mess possible, you want to have a “dry” hand and a “wet” hand. I use my left hand as my “wet” hand. That basically means I only use my left hand to dip the chicken in the egg. My right hand I use as the “dry” hand which means I use it only to dip the chicken in the flour and breadcrumbs mixture. 

With your “wet” hand drop the chicken in the egg first, then plop the chicken into the flour mixture (without touching the flour). With your “dry” hand coat the chicken in the flour then carry it over to the egg again. With your “wet” hand coat the chicken and then plop it into the breadcrumb mixture. With your “dry” hand coat the chicken.

Place the finished chicken on the foil and repeat the steps on each piece of chicken. 

Bake in the oven at 400 degrees F for about 20 minutes on each side. 

Crispy and golden brown chicken cooked to perfection!

Baked Coconut Crusted Chicken


  • 3 Chicken Breasts

  • 1 cup All-Purpose Flour

  • 1 tbs. Paprika

  • Salt & Pepper to taste

  • 1 and 1/2 cup Sweetened Coconut Flakes

  • 1 cup Plain Breadcrumbs

  • 3 Eggs

  • 1 tbs. olive oil


  1. Preheat oven to 400 degrees F.

  2. In a bowl mix flour, paprika and salt and pepper.

  3. In a separate bowl mix coconut flakes and breadcrumbs.

  4. In another bowl crack all three eggs and whisk together.

  5. Cut the fat off the chicken and cut it into smaller pieces.

  6. Line a baking sheet with foil and a thin layer of olive oil.

  7. One piece at a time, dip the chicken strip in the egg with one hand. With the other hand dredge it in the flour mixture. With your egg hand dip it into the eggs mixture. Finally with your dry hand dredge it in the coconut mixture.

  8. Add your chicken to the baking sheet. Bake for about 20 minutes on each side.
