EASY AND DELICIOUS AVO TOAST 🥑

It’s about time I get a blog post up about avo toast!! I love avo toast and constantly make it in the mornings I need to run out of the door before class. This is a classic recipe that is suuuper easy and feels really filling and nutritious. It is surprisingly really quick recipe to whip together in the morning. Now obviously the photos below show an over glorified idea of what it looks like when I make the avo toast. I am most definitely not making it look this good on the regular. And don’t worry, you don’t need to either.


Start by putting your toast in the toaster and getting it as toasty as you like. I recommend going a little toastier than normal because the avocado will make it less crisp.

Next, grab a bowl and cut open your avocado and slice it in. Then add salt, chopped cilantro, and a little lemon juice. Mix until well combined. (you could totally also just slice the avocado straight on the toast and add the salt, cilantro, and lemon as a topping). I just prefer mashing it so it’s more likely to stay on my toast when Ieat it!

Once you toast pops up, you can add your avocado mixture to the top of it.

The best part of this recipe is you can add so manyyyyy different toppings to change the entire flavor!

The one I had the morning I made this included just some sliced radish and a fried egg on top. I made this in 5 minutes. Literally just toast bread, sliced avocado and toppings and add it all on top the bread. It feels way more filling and (honestly better for you) than a bowl of cereal or just coffee yikes😨 You can still get out the door quickly and feel good about your breakfast.

This is the fanciest and best-looking one I have made, I won’t lie but no matter how messy yours look, it will still be bomb. Throw a little Cholula over the top of plain avo toast, BOMB.

INGREDIENTS

avo toast

  • 1 slice bread of your choice I used wheat + berry bread

  • 1 Avocado

  • Salt to taste

  • 1/2 small Lemon

  • 1/1 tbs. chopped cilantro

topping options

  • 4 slices Radish

  • 1 fried, poached, scrambled egg

  • sliced red cabbage

  • cholula/ salsa drizzled over

  • cojita cheese crumbled over
