ONE POT SAUSAGE, RICE AND VEGGIES

This is a super easy recipe to throw together when you forget to take something out to defrost. Literally, none of this requires planning. On the other hand, this is also a really easy recipe for meal prep! Chop, dice and throw together. Throwing everything together in one pot is one of my favorite ways to make dinner. Fewer dishes and who doesn’t love that. 

Easy Sausage, Rice & Veggies

One Link of Sausage

1  Sweet Potato

1/2  Bell Pepper

1/4  Onion

6  Brussel Sprouts

1  cup Brown Rice

2  cups Water

Salt & Pepper to taste

First slice the sausage. Then, dice sweet potato, onion and bell pepper. Lastly, cut the Brussel sprouts into fourths. Meanwhile, in a separate saucepan, toss in your brown rice, add the water and let it bring to a boil. Once boiling, turn to low and cover and let it simmer for 20 minutes. 



It is literally as simple as that. Your meal is ready to go and all done. You have your vegetables, your protein, and your carbs. The best part of this recipe is you can switch things out for what you have on hand. If you want to use tofu instead of meat or beans, easy switch. If you prefer quinoa over rice, easy switch. Everything can be altered to your preferences.

One Pot Sausage and Rice


INGREDIENTS

  • 1 package Sausage

  • 1 Sweet Potato

  • 1/2 Bell Pepper

  • 1/4 Onion

  • 6 Brussel Sprouts

  • 1 cup Brown Rice

  • 2 cups Water

INSTRUCTIONS

  1. Slice the sausage.

  2. Dice sweet potato, onion and bell pepper.

  3. Cut Brussel sprouts into fourths.

  4. In a separate saucepan, toss in your brown rice, add the water and let it bring to a boil. Once boiling, turn to low and cover and let it simmer for 20 minutes.

  5. Begin by browning sausage, sweet potato, Brussel sprouts, onion and bell pepper together.

  6. Once the onion is clear and the sweet potato, Brussel sprouts and bell pepper are all soft, toss in the brown rice. Mix together and it is ready to serve!
