SWEET POTATO BREAKFAST HASH

I decided to throw this recipe together one morning at home. I felt like having something better than a frozen waffle but easier than a whole she-bang of a breakfast. So hopefully you guys find this easy and delicious! It was super filling.

I started with half a sweet potato, about medium-sized. Heat oil in a medium-sized pan. I prefer using olive oil but you can use any vegetable or corn oil as well.

Dice big enough to bite into but small enough to cook fast.

Throw the potatoes in the pan and let them get brown and crispy. Add salt, pepper and garlic powder. These all depend on your likings but I included the amount of garlic powder I recommend (1/2 tsp). They should also be fairly soft and almost ready to eat. 

Next cut up the veggies you want to add in. You could add a lot of different veggies but this is what I had on hand.

Let the veggies get golden and soft. 

Crack a couple eggs on top of the hash. Put it on low heat and add salt and pepper, then cover.

Depending on how done you like your eggs, keep it covered. Once the whites actually turn white, the egg is over easy. If you keep it covered any longer after that, the yolk will get more done.

The recipe will take a total of 15 minutes. For something, healthy, filling and quick, you couldn’t ask for more. You could even meal prep this the night before and get it whipped together in the morning. I hope this recipe inspires you guys to make breakfast instead of heating up frozen crap all the time. easy sweet potato breakfast hash

INGREDIENTS

  • 1/2 Sweet Potato

  • 1/4 Onion

  • 1/4 Green Bell Pepper

  • 1/2 tsp Garlic Powder

  • 2 Eggs

  • Salt and Pepper

  • 3 tbs. olive oil

  • Green Onion for garnish

INSTRUCTIONS

  1. Begin by heating a medium skillet with oil.

  2. Chop the sweet potato into small cubed pieces.

  3. Season and brown the veggies.

  4. Add the sweet potato and brown.

  5. Once the potatoes are cooked through, add eggs and cover on low. Depending on how runny you like your eggs, let cook and serve.
