One of my first posts was the Blueberry Lemon Loaf Cake and that was seriously one of my favorite recipes! So when I had some greek yogurt and blueberries left in the fridge I figured I would make a recipe out of it.  I personally think these would be amazing to make ahead and freeze for busy mornings. 

Starting off with all the ingredients you need. 

Greek Yogurt Blueberry Lemon Waffles

1 Waffle Maker

3/4 cup Greek Yogurt

1 Lemon, for juice

1 Container of Blueberries (4.4 oz)

2 cups of Flour

2 and 1/2 tsp Baking Powder

1/4 cup Cornstarch

1 and 1/2 cups Milk

2 Eggs

1 tsp Vanilla Extract

3 tbs Granulated Sugar

2 tbs. Salted Butter

Begin by mixing together all the ingredients together in a medium bowl. Leave the blueberries out and a tiny bit of flour. You can do the fancy half dry and half wet steps but I found it works just fine mixing everyone together. 

Get as many blueberries you would like the container and get them wet. Add some flour and roll them around in it. This will prevent the blueberries from sinking. I used about 3/4 of the blueberries. 

Get the blueberries well incorporated and the batter is complete! 

Get your little set-up going with the waffle maker, some non-stick spray or butter, and the batter. 

Be careful not to overflow your waffle maker with too much batter. Also a forewarning, the blueberries pop and make a bit of a mess, but a delicious one nonetheless. 

Let them get crispy brown and cooked through. For my waffle maker, this took a couple minutes (2-4)

Ready to take them out and let the next ones in! This recipe makes about 8 waffles. These waffles tasted gourmet but really easy to make. I seriously threw these together with some ingredients I had lying around. These would be amazing to freeze and heat up on busy mornings.

Greek Yogurt Blueberry Lemon Waffles

Servings 8 waffles


  • 1 Waffle Maker

  • 3/4 cup Greek Yogurt

  • 1 Lemon for juice

  • 1 4.4 oz. Container of Fresh Blueberries

  • 2 cups Flour

  • 2 and 1/2 tsp Baking Powder

  • 1/4 cup Cornstarch

  • 1 and 1/2 cups Milk

  • 2 Eggs

  • 1 tsp Vanilla Extract

  • 3 tbs Granulated Sugar

  • Pam (non-stick spray or butter)

  • 2 tbs Salted Butter


  1. In a medium mixing bowl, mix together all the ingredients except your fresh blueberries.

  2. Take those blueberries in a separate bowl and get them wet. Add in a tiny bit of flour, just enough to coat them.

  3. Combine the blueberries and the batter and mix well.

  4. Get your waffle maker all warmed up and ready to go! Add in the batter but be sure not to overfill. My tip is to just put enough batter to fill the surface area of the pan.

  5. Let cook and get golden, this took about 2-4 minutes.

  6. Plate and enjoy now or freeze and enjoy later!
