The perfect sophisticated appetizer. This is the easiest side or appetizer for entertaining with friends. You can dress it up or keep it simple and that’s why it works so well! It’s a pretty healthy substitute for a baked potato or carbs on a side dish. 

You need whole portabello mushrooms and mozzarella cheese. You could also use basil, cream cheese, tomatoes, cucumbers, garlic, the options are endless. For today, we are going with a relatively basic recipe. 

First, preheat the oven to 400 degrees F. Then, cut the mushrooms in half. You can only use one-half of the mushrooms for this recipe. If you try to scoop the piece with the stem, it crumbles. So scoop out the center of the top half of the mushroom.

Don’t scoop too much, just enough to have a little well. Get a sheet and line it with aluminum foil. Lightly spread olive oil on the bottom of the pan.

Next,  salt and pepper the mushrooms, add a basil leaf and then add the cheese. This is the part you can get creative with toppings but we kept it simple.

Top of with cheese and put in the oven for 10-15 minutes. 

For the last 2 or 3 minutes, I put the mushrooms on the top rack to let the cheese brown a little.

Mozzarella Stuffed Portabello Mushrooms


  • 6 Whole Portabello Mushrooms

  • 1/2 cup Mozzarella Cheese

  • Salt & Pepper for taste


  • 6 Fresh Basil Leaves


  1. Preheat oven to 400 degrees F.

  2. Cut mushrooms in half and scoop center out of top half. The bottom halves cannot be scooped (save them for a later recipe).

  3. Line a sheet with aluminim and olive oil. Salt and pepper the mushrooms.

  4. For more flavor, add a basil leaf and then the mozzarella on top of that.

  5. Bake for 10-15 minutes. Let the cheese get the tiniest bit brown and enjoy!
