Naked cakes are the newest trend to hit baking. It is matching that rustic look that everyone is looking for in weddings, parties, baby showers and everything else! They really are not that difficult to make. If you already know how to make a cake and frosting it really is just the technique of adding the frosting you need to master. You can even use basic box mix and a tub of icing to make this come together. To go completely homemade check out the recipe down below.
Vanilla Naked Cake Ingredients:
This is the dry mixture with flour, baking soda, baking powder and salt.
The wet ingredients coming together.
The consistency should slowly change with every egg added.
This is the third egg added and you can tell it is getting a lot more liquidy.
This is what the mixture should look like right before adding the dry ingredient bowl.
After adding and mixing the dry ingredients this is the consistency and color it should follow.
Split into two pans evenly and bake at 350 degrees F.
Two pans completely cooled and out of the oven. I doubled the recipe and made four pans to make my cake taller.
Buttercream Icing Ingredients:
The ingredients are super simple! Only vanilla, sugar, butter and milk. The milk is only needed if the consistency comes out a bit thick. I used the small amount of milk to help smooth it out.
The icing when completely mixed.
Start filling your piping tool or piping bag to begin decorating.
I placed a dollop of icing on my cake stand to ensure the cake did not slip and slide when moving it.
With the first layer I put a generous amount of icing to start and then layered strawberries on top.
To ensure the sides of my cake would not have gaps i put a thicker layer surrounding the edges of the cake.
I slapped some icing on the sides and top and started scraping it about. Be sure to start small and build up with the icing for the coverage you want.
Adding some strawberries on top for decoration is one way to decorate but the options are endless. You can do flower, more icing, glitter, sprinkles etc.

Strawberry Buttercream Naked Cake
1 cup Butter,softened
1 and 1/3 cup Granulated Sugar
1 tsp Vanilla Extract
1 and 3/4 cups Flour
2 and 1/2 tsp Baking Powder
1/2 tsp Salt
1 Lemon, for zest
1 container of Strawberries
1 cup Butter
4 cups Powdered Sugar
2 tsp Vanilla
1 tbs Milk
Preheat oven 350 degrees F. Grease two round pans and cut circles to fit into bottoms of pans.
In a bowl, using an electric mixer, mix butter with sugar until fluffy.
Add eggs one by one until fully combined.
Add the vanilla and lemon zest.
In a separate bowl combine flour, baking soda, baking powder and salt.
Combine the flour mixture into the butter and eggs mixture. Mix very well.
Pour the batter into the two pans as evenly split as possible.
Bake for 25-30 minutes or until a toothpick comes out clean.
Let cakes cool on rack for 15 minutes or so then remove the cake from the pans.
For this specific recipe I doubled the recipe to achieve a taller cake.
Slice strawberries in rounds to lay flat in between layers. Begin to layer the cake with icing and strawberries.
Once finished layering, scrape a dollop of icing to achieve the "naked" look. Cover as much as you would like. You can use a dull knife, spatula or cake scraper to scrape the icing on.
With an electric mixer, mix the butter until it is lighter in color and fluffier in texture. (Make sure you are using real butter NOT vegetable oil spread).
Mix in sugar slowly beating it in.
Add the vanilla and milk and let set in the fridge for a few minutes.
The icing is ready to decorate with! Enjoy.
