VEGAN BUFFALO CAULIFLOWER TACOS

As I have said a trillion times before I love tacos, I’m seriously a little obsessed. It’s unhealthy. But that’s beside the point😂 Today I actually have a healthier option for tacos. Instead of meat, we are using cauliflower😋

Vegan Buffalo Cauliflower Tacos

1/2 head of Cauliflower

1 cup Buffalo Sauce

1-2 tbs Olive Oil

Salt & Pepper

Tortillas or Lettuce Wraps

*this exact buffalo sauce may not be vegan-friendly, look for options with no dairy listed in the ingredients*

Preheat the oven to 425 degrees Fahrenheit. Cut your head of cauliflower in half. Then cut into tiny pieces, basically as small as you would want your meat in a taco to be. 

Grab your baking sheet and line it with aluminum foil. Coat the cauliflower with olive oil and salt and pepper. Get your hands in there and make sure every piece is coated to avoid soggy or dry pieces.

Place the cauliflower in the oven for 10 minutes until it is golden brown. 

Pour and mix the buffalo sauce over the cauliflower and place in the oven for another 10 minutes. 

The cauliflower should be a little crisp and tender and the sauce should be less.. “wet” for lack of a better word. Yea that’s seriously it. You could make dinner in less than 30 minutes and sit on your butt for at least 20 of those minutes.

Crisp up some tortillas and voila. Perfect vegan tacos. You can even add some coleslaw or beans. They are full of flavor and taste like buffalo wings. This could even be a perfect snack on its own. 

You could take it a step further and make them into lettuce wraps instead of tacos! This recipe is seriously so simple. If you don’t love buffalo sauce keep it simple and add siracha on top or salsa instead! Make these your own little creation.
