CHICKEN POZOLE SOUP

Honestly, this is gonna be one of the easiest recipes I have ever posted. You just throw all the ingredients together and let it boil. I know I have said that before but for real, this is the one.

It is also a really perfect recipe for the weather cali is suffering through.


We are all dressing like it is 70 degrees outside. For cali, that’s cold but we should honestly be dressing warmer but we are embarrassed to dress for the weather and be made fun of for wearing a ridiculous amount of clothes for “California”. When really it’s 50 flipping degrees and like 40 in the mornings!! Quick rant for everyone, now let’s get into the recipe haha.


You’re going to want to throw all the ingredients in the pot and run back to bed with a blanket.

Start by grabbing a large pot and add the water and tomato sauce. Put it on high heat.


Shred your chicken and add it to the pot.


Add the rest of the ingredients and let it come to a boil.


Let it boil for 10 minutes and then let it rest for another 15- 20 minutes.

Serve it in a bowl and let it cool down before enjoying. You can totally eat it plain but the real secret is adding the delicious toppings.

I like to add lemon juice, Cholula, shredded cabbage, radish and chips!

Mix it all together and booooom. Most delicious and easy recipe. The hominy is my absolute favorite part. If you have never had it, it is a must have in my book.

INGREDIENTS

  • 1 Rotisserie Chicken

  • 1 8 oz. can Tomato Sauce

  • 4 tsp Lawry's Seasoning Salt

  • 1 tsp crushed oregano

  • 5 Bay Leaves

  • 1 25 oz. can Hominy

INSTRUCTIONS

  1. Start by grabbing a large pot and adding the water and tomato sauce. Put it on high heat.

  2. Shred your chicken and add it to the pot.

  3. Add the rest of the ingredients and let it come to a boil.

  4. Let it boil for 10 minutes and then let it rest for another 15- 20 minutes.

  5. Enjoy!
