CUCUMBER EDEMAME SALAD

Summer calls for fresh recipes. I became obsessed with cucumber edemame salads at the start of spring and have been trying different variations of it. What I love the most is that you can really use anything you have on hand to make a delicious salad.
One note is that I did not add shallot to this recipe, one I didn't have any on hand and two, my mom doesn't particularly like onion. Nonetheless still delicious, and like I said, you can truly customize this to what you like! I think next time I will try a different chili crunch from Trader Joes.
INGREDIENTS
SALAD:
12 oz. Shelled Edemame, cooked and cooled
1 English Cucumber, sliced
¼ cup Cilantro, chopped
1 tbs. Sesame Seeds
1 Avocado
DRESSING:
2 tbs. Soy Sauce, low sodium
1 Lime, juiced (about 2 tbs.)
1 tsp. Rice Vinegar
1 tsp. Sesame Oil
1 tbs. Honey
1 tsp. Ginger, fresh and grated
1 Shallot, thinly sliced
pinch Red Pepper Flakes or 1-2 tsp. Crunchy Chili Oil
Salt & Pepper, to taste
INSTRUCTIONS
Cook the edamame according to the package directions.
In a small bowl, whisk together the soy sauce, lime juice, honey, rice vinegar, sesame oil, and red pepper flakes or chili oil until combined.
In a large bowl, combine the cooled edamame, cucumber, shallot, cilantro, and sesame seeds.
Pour the dressing over the salad and toss until evenly coated.
Gently fold in the avocado just before serving to keep it from breaking apart.
Taste and adjust with additional lime juice, soy sauce, or chili oil if desired.
