EASY TIRAMISU BALLS
Listen..sometimes I want to make a nice little dessert for a party but I also don't want to spend a ton of time making it happen. Not that the Tiramisu recipe I love takes forever, but it definitely isn't a bite size treat perfect for larger get togethers!
My other favorite tiramisu recipe is the Tiramisu Espresso Brownie recipe, sooooo rich and delicious.
These are the perfect in between when you want something with wow factor but also doesn't take a bunch of time. At most this recipe probably takes only 30 minutes.
INGREDIENTS
(makes about 26 balls)
200g Ladyfingers (a package of 24)
½ cup Espresso, cooled
226g Mascarpone
½ cup Powdered Sugar, sifted
1 tsp. Vanilla Extract
1 pinch Salt
~2 tbs. Cocoa Powder, for coating
INSTRUCTIONS
Crush the ladyfingers in a food processor until fine crumbs form.
In a medium bowl, add mascarpone cheese, vanilla extract, and a pinch of salt in a mixing bowl. Sift in powdered sugar.
With an electric hand mixer, combine until smooth and creamy. You can also whisk by hand!
Add the cooled espresso; mix until combined.
Fold in the crushed ladyfinger crumbs gently until well incorporated.
Roll the mixture into about 1.5 tbs.-sized balls using your hands.
Dust the assembled balls with cocoa powder.
Chill in the refrigerator for at least 30 minutes. These will stay in the fridge for a day or two if you would like to make ahead!

They were the perfect little coffee pick me up. Similar to a cake pop but definitely softer! I really loved these just as much a full blown tiramisu but these don't require plates, forks, or any extra mess to clean up.
