EASY VEGAN CHOCOLATE MOUSSE

Again, with the start of the new year, its important to find snacks and sweet treats that don't entirely throw off your goals. I love finding ways to sneak in extra protein in ways that don't feel so overwhelming.


Rich, indulgent, and oh-so-decadent, this vegan chocolate mousse is proof that plant-based desserts can be just as luxurious as their traditional counterparts. With its silky-smooth texture and deep chocolate flavor, it’s the perfect dessert to wow your guests or treat yourself to something special.


These chocolate mousses are absolutely perfect as a snack and an after dinner sweet treat.

INGREDIENTS

350g (12 oz) Silken Tofu

1 cup Dark Chocolate

1 tbs. Cocoa Powder

3 tbs. Maple Syrup

1 tsp. Vanilla Paste or Extract

1 shot Espresso

1 pinch Salt


Topping Ideas:

Dark Chocolate, shaved

Whipped Cream

Berries

pinch of Flaky Salt

Candied Orange

Peppermint Flakes


INSTRUCTIONS
  1. Break up the chocolate and melt using a double boiler or in 30 second bursts in the microwave. Let it cool for a few minutes.

  2. Drain any excess liquid from the tofu. Add all the ingredients to the blender and blend until smooth.

  3. Add to ramekins or dishes and place in the fridge for an hour to set. Enjoy with fresh toppings!

This mousse is very pudding like, and so silky smooth. I think adding some more textures for toppings it takes it to the next level!
