VEGAN CHOCOLATE PEPPERMINT COOKIES


Almost every year for Christmas I make my friends/ family baked goods. I try to cater to things they like. Last year I made my bestie Logan these peppermint cookies. I loved them so much that I decided to run them back again this year. I got the recipe from Nora Cooks.


I may have forgot to document the first few steps so screenshots from my video will have to do haha.

INGREDIENTS

- ½ cup Vegan Butter, melted

- 1 cup Granulated Sugar

- 1 tsp. Vanilla Extract

- ½ tsp. Peppermint Extract

- 1 tbs. Cornstarch

- ¼ cup Oat Milk

- 1 ½ cups All Purpose Flour

- ½ cup Cocoa Powder

- 1 tsp. Baking Soda

- ¼ tsp. Salt

- 1 cup Chocolate Chips

- 1 cup Candy Cane, crushed, plus a little extra for toppings


INSTRUCTIONS
  1. Preheat oven to 350 degrees F.

  2. Line a baking sheet with parchment.

  3. In a large bowl, whisk together the melted butter and sugar. Once well combined, add both extracts, cornstarch and oat milk.

  4. Over that bowl, sift in the flour, cocoa, baking soda, and salt. The dough will be very thick so mix until combined.

  5. Fold in the chocolate chips and the crushed candy cane.

  6. Scoop about 2 tbs of dough at a time and flatten onto the baking sheet. They will spread a little more. If you would like, now is the time to top it with more chocolate chips or candy cane pieces.

  7. Bake for 10-12 minutes. They will look soft still but they firm up as they cool. Let them cool down and enjoy!

These cookies are chewy, chocolatey and just the perfect amount of peppermint to make them holiday.
