BLENDED BLUEBERRY OVERNIGHT OATS

If you're looking for a delicious and versatile way to start your day (or satisfy those late-night cravings), you've come to the right place! These overnight oats are not just a breakfast option; they're a sweet little snack or even a delightful treat when you're winding down for the night. With minimal prep and endless flavor combinations, you'll wonder how you ever lived without them.

INGREDIENTS
(makes about 2-3 servings, depending on your container size, approx 12 oz.)
1 cup Rolled Oats
½ cup Blueberries, fresh or frozen
½ cup Dairy-Free Yogurt
¼ cup Plant-Based Milk, soy for higher protein
1-2 tbs. Maple Syrup, to taste
1 tbs. Chia Seeds
1 tbs. Flax Seeds
Optional Toppings:
¼ cup Dark Chocolate, melted
Blueberries, fresh
Granola
INSTRUCTIONS
In a food processor or blender, blend together everything apart from the toppings.
Place some blueberries in the bottom of your containers. Then, pour into your bowls/ramekins/jars.
Top with more yogurt, fresh blueberries, granola, and melted chocolate*.
Leave to set in the fridge for 1 hour or overnight. Enjoy!
*When pouring your chocolate layer, keep in mind you don't want it to be so thick you can't break through it with a spoon. Pour in the center and spread the chocolate by turning your glass until it reaches all edges.

It is the perfect quick breakfast that is packed with protein and tastes delish! Even more important, for me anyways, is the creamy consistency. Topping with a variety of things adds to the textures and I love how custom it can be.
