There is nothing like the January come down from all the holidays and lack of self care through the chaos. I personally was finding myself too sick or busy to really hone in on taking good care of myself.
I am trying to get back into a routine with some fun prepping recipes to get me excited about eating. It's also such an easy recipe to follow and have prepped in the fridge for the week.
I think these oats are a perfect sweet breakfast, little snack, or late night treat.
INGREDIENTS
(makes about 2-3 servings, depending on your container size)
1 cup Rolled Oats
½ cup Dairy-Free Yogurt
½ cup Oat Milk
1/4 cup Nut Butter of your choice, smooth
1-2 tbs. Maple Syrup, to taste
¼ cup Dark Chocolate, melted
handful Nuts, toasted and chopped
INSTRUCTIONS
In a food processor or blender, blend together everything apart from the chocolate and nuts.
Pour* into your bowls/ramekins/jars and top with melted chocolate and a few chopped nuts. Leave to set in the fridge for 1 hour or overnight. Enjoy!
*When pouring your chocolate layer, keep in mind you don't want it to be so thick you can't break through it with a spoon. Pour in the center and spread the chocolate by turning your glass until it reaches all edges.
