MIXED BERRY COMPOTE


Mixed berry compote is so incredibly easy to make and versatile. You can use any berries you have on hand and it will be delicious every time. I used it for a filling in the center of a lemon cake but you can also use it as a topping for cheesecake, pancakes, or ice cream. I highly recommend this recipe for a simple way to spice up any basic recipe.


INGREDIENTS

- 1 ½ cups Berries, fresh or frozen

- ½ cup Granulated Sugar

- 1 Lemon, juiced


INSTRUCTIONS
  1. In a pot over medium heat, combine the berries, sugar, and lemon juice.

  2. Let simmer until the fruits are soft and the sauce is thick. This takes about 5 minutes. You will know it's ready once you run a spoon through the pot and the sauce slowly fills the empty space again. (If it's too liquidy, add a 1/4 tsp. of cornstarch at a time).

  3. Allow to cool completely before using. Refrigerate for best results.
