PREMADE BREAKFAST SAMMY'S



Sometimes you just need a quick breakfast on-the-go. These premade sandwiches are perfect to keep on hand to heat up before heading out for the day or getting your day started.


INGREDIENTS

(makes 8)

Homemade Sausage Patties (half the recipe, or freeze the other half of the patties)

8-16 slices Bacon, cooked 16 Eggs

Salt & Pepper, to taste

English Muffins


INSTRUCTIONS

EGGS:

  1. Spray a baking pan with non-stick spray and preheat your oven to 350 degrees F.

  2. Whisk eggs and add all spices.

  3. Pour into your greased 8x8 pan.

  4. Bake for 10-15 minutes, until set.

  5. Slice into four squares. Set aside.


ASSEMBLE:

  1. Toast your english muffins.

  2. Have patties prepared beforehand.

  3. On your bottom muffin, add the sausage patty, slice of egg, 1-2 slices of bacon, and other muffin.


FREEZING:

  1. Let the sandwiches cool completely before freezing them.

  2. Wrap each individually in parchment paper. Then wrap again in foil.

  3. Store all in large Ziploc bags or an air-tight container.

  4. Place in the freezer and freeze for up to 3 months.

  5. It’s important to make sure your sandwiches have cooled before wrapping them in parchment paper and storing in the freezer!

  6. I like to individually wrap them in parchment and then wrap in foil.

REHEATING:

  1. You can pop these into the microwave without defrosting overnight.

  2. Unwrap from the foil and then microwave for 1 minute. Unwrap from the parchment and microwave another minute or two.
