Now that I realize I do like french toast after my Vegan French Toast recipe, I figured it was time to try regular french toast, but make it fall.
Get your pumpkin spice latte ready, and whip up some quick pumpkin french toast in the morning. This recipe makes 6-8 slices but you could easily double the recipe!
This recipe has a really subtle pumpkin spice flavor that perfectly reminds me its fall and the weather is chilly (even if it's only ever so slightly because its southern california).
INGREDIENTS
¼ cup Pumpkin Puree, 100% pumpkin
2 Eggs
â…“ cup Milk
1 tbs. Granulated Sugar
½ tsp. Cinnamon
½ tsp. Vanilla Extract
â…› tsp. Nutmeg
6-8 slices Brioche
2-3 tbs. Butter, for frying
INSTRUCTIONS
In a shallow bowl, wide enough to hold a piece of your bread, whisk together the pumpkin, eggs, milk, sugar, cinnamon, vanilla, and nutmeg.
In a large pan over medium-high heat melt some of your butter.
Dip each side of the bread in the batter and let soak for a couple seconds, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown. Add more butter to the pan as needed in between pieces of bread.Â
Top with maple syrup, powdered sugar, whipped cream, or fresh fruit!
I highly recommend using the air fryer to reheat. It will give your french toast a nice crisp on the outside as opposed to a soggy piece of bread.

I got my bread from Trader Joe's and I highly recommend. If you can get your hands on the Vegna Brioche loaf, that is also soooo yummy. I highly recommend my Vegan French Toast recipe. I will have to test a pumpkin version next time I get my hand on the vegan brioche.
