It was one of my good friend's birthdays and she is so incredibly supportive of me and especially this blog! I wanted to make her a lil' something and whip together a loaf cake from The Conscientious Eater. I made a small change of using vegetable oil instead of coconut oil and it came out great.
INGREDIENTS
LOAF
- 2 tbs. Lemon Zest
- ¼ cup Lemon Juice
- ¾ cup Oat Milk
- ½ cup Vegetable Oil
- ¾ cup Granulated Sugar
- 2 tsp. Baking Powder
- ½ tsp. Baking Soda
- ½ tsp. Salt
- 1 ½ cups All Purpose Flour
GLAZE
- 1-2 tbs. Lemon Juice
- 1 cup Powdered Sugar
INSTRUCTIONS
Preheat the oven to 350 degrees F and grease or line your loaf pan(s).
In a large bowl, zest two lemons until you get about 2 tbs. of lemon zest.
Then add the lemon juice, oat milk, vegetable oil, and sugar until combined.
Whisk in baking powder, baking soda, and salt.
Last, stir in flour until a smooth batter forms.
Pour batter into pan(s) and bake for 45-50 minutes, until golden brown and a toothpick comes out clean.
While the cake cools, prepare your glaze. In a small bowl, add powdered sugar and slowly add lemon juice until a smooth and thick glaze forms. Be careful not to make the glaze too runny.
Once the cake is cooled completely, go ahead and glaze the loaf cake.
Garnish with lemon zest, lemon slice, or another fresh citrus.
TIPS
Too much beating of the filling mixture creates air in the batter and causes it to crack.
Don't rush the cooling process!!
