VEGAN ORANGE CARDAMOM CAKE


I am trying this recipe from Heartful Table! In their recipe, they use an icing and different toppings but the cake recipe is the same. I wanted to make a fall inspired recipe with warm spices that wasn't so traditional for Thanksgiving dessert. I also believe this recipe could be delicious year round and go with a lot of different meals.


INGREDIENTS

LOAF BATTER:

- 1 Orange, medium-sized

- 1 cup All-Purpose Flour

- 1 cup Almond Flour

- 1 cup Granulated Sugar

- 3 tsp. Baking Powder

- 1 tsp. Cardamom

- ½ tsp. Nutmeg

- ⅓ cup Vegetable Oil

- ¼ cup Vegan Vanilla Yogurt

- Candied Orange Slices, for topping

- Pistachios, chopped


INSTRUCTIONS
  1. In a medium pot, add the orange and bring water to a boil. Cook on high heat for about 15 minutes until the orange can be pierced through easily.

  2. While the orange cooks, in a large bowl, sift the dry ingredients together.

  3. Preheat the oven to 350 degrees F.

  4. In a blender, add the wet ingredients and the cooked orange. Blend on high for about 90 seconds or until you have a thick smooth liquid. Small pieces of orange is okay.

  5. Pour the wet ingredients into the dry. Fold together until just combined. The batter will be thick.

  6. In a parchment lined and greased pan, add the batter and smooth out. Bake for about 40-50 minutes or until golden and a toothpick comes out clean.

  7. Let cool completely before removing from the pan.

  8. Decorate your cake with vegan buttercream, candied orange slices, and chopped pistachios.

The cake was extremely simple to decorate and I think even a novice baker could successfully recreate this. It does take some time to get your candied oranges ready but it is really easy. If you need the recipe for the candied oranges, check it out here.
