MY MOM'S SPANISH RICE

My mom is notorious in my family for making perfect Spanish rice. It is fluffy, flavorful, and bright! Another family classic we are going to share with you😊 It is super easy, the key is just patience but you basically throw it together and it’s done.

INGREDIENTS
  • 1 cup Rice

  • 2 ½ cups Water

  • 2 tsp. Chicken Bouillon*

  • 1 tbs. Olive Oil

  • 1 tbs. Tomato Sauce

*or replace water and bouillon for 2 and ½ cups of chicken broth

INSTRUCTIONS
  1. First, in a medium saucepan brown your rice in olive oil over medium heat.

  2. Then, add in your water, bouillon and tomato sauce.

  3. Let it come to a boil. Cover and put on low heat for 25 minutes or until fluffy.

Start with one cup of rice. If you want to be super sanitary (like most people) rinse it out.

On medium heat, brown your rice in a tbs. olive oil.

It should look like this when it is ready for the next step.

Add in 2 and 1/2 cups of water, 2 tbs of chicken bouillon, and 2 tbs of tomato sauce. Let it come to a boil.

Cover and turn to low heat. Let it sit for about 25 minutes. The key is to not open the lid before the time is up. I know it is super tempting but don’t do it!!

If you manage to hold back and let it cook through it should look like this.

This recipe is honestly so freaking easy! I recommend everyone try it as a side for their next meal. If you guys have any suggestions for future posts please leave them in the comments below. I will catch y’all next week! I am heading to Big Bear this weekend so I might have a blog post on our stay! 🌊
