VEGAN ARTICHOKE DIP


When you are following a non-dairy diet or vegan diet it feels like all the creamy dips and appetizers are off the table. Luckily, there are replacements and options to achieve the creamy texture without the dairy!


This recipe is really simple and delicious, so let's get into it.


INGREDIENTS

- ½ Onion, diced

- 4 tsp. Garlic, minced

- 14 oz Spinach, frozen

- 2 cans Artichoke Hearts, quartered

- 1 can Jalapeños, diced

- 1 ½ cups Oat Milk

- ½ block Tofu, firm

- 1 cup Cashews, soaked

- ⅓ cup Nutrional Yeast

- Cayenne, pinch

- 1 ½ tsp. Salt

- 2 tbs. Lemon, juice


INSTRUCTIONS
  1. Before getting started you want to soak cashews in hot water for about 10-20 minutes until softened. Set aside.

  2. In a large pot, sauté onion and garlic over medium heat. Once onions are translucent and garlic is fragrant, add the spinach, artichoke, and jalapeños.

  3. Strain your cashews once soaked.

  4. In a blender, add the oat milk, tofu, cashews, nutritional yeast, cayenne, salt, and lemon juice. Purée until a smooth and creamy mixture.

  5. Add the creamy mixture to the pot with artichokes.

  6. Cut open a bread bowl and carve out the inside so you can fit as much dip as possible.

  7. Fill with your dip and bake at 350 degrees F for 20-30 minutes until the top is golden.

  8. Serve with pieces of sourdough, pita chips or tortilla chips!
